Cinnamon Swirl Quick Bread

I mentioned here before about our amazing neighbor Carole when we lived in Florida and how she would bring us fresh bread on Christmas Eve. It was such a thoughtful gift. Homemade bread is such a labor of love and for her to spend time to make some for us and bring it over fresh from the oven was like a big expression of love. We were always so grateful to get that loaf of bread each year. We’ve since moved away from that home so I’ve started a tradition of gifting fresh bread to my friends and neighbors. Last year I made loaves of sourdough and cinnamon rolls. This year I have a few more gifts to make so I’m trying out a few more options like this cinnamon swirl quick bread.

I ran to Walmart on the way home earlier this week and picked up the ingredients to make a few mini loaves of cinnamon swirl quick bread. I can always count on Walmart to have the fresh ingredients that I’m looking for. They had all the supplies I needed to make the bread. I also grabbed some supplies like parchment paper and ribbon to practice my holiday gift wrapping for the delivery of these homemade bread gifts.
I like this recipe for cinnamon swirl quick bread because it truly is really quick and easy to make. I used my KitchenAid mixer to whip up the batter, spooned it into mini loaf tins, and then baked them for about 40 minutes. You absolutely do not need a mixer to make this recipe. You can easily mix the batter together in a mixing bowl. This recipe can easily be doubled if you’d like to make more mini loaves.

To make the cinnamon swirl quick bread you’ll need to plan slightly ahead because the wet ingredients need to be at room temperature. I just set them out on my counter about an hour before I was ready to bake and that was the perfect amount of time to get them to room temperature.
This recipe makes 4 mini loaves.

Cinnamon Swirl Bread
Bread Ingredients
- 4 cups all-purpose flour
- 2 teaspoon baking soda
- 1 teaspoon salt
- 2 large eggs, at room temperature
- 1 1/2 cup granulated sugar
- 2/3 cup vegetable oil
- 2/3 cup Greek yogurt, at room temperature
- 1 1/3 cup milk, at room temperature*
- 1 Tablespoon pure vanilla extract
Swirl Ingredients
- 1/2 cup granulated sugar
- 1 Tablespoon ground cinnamon
Instructions
- Preheat oven to 350°F. Spray (4) mini loaf pans (3.25 in x5.75 in) with nonstick spray.
2. Whisk together the flour, baking soda, and salt in the bowl of a stand mixer. In a medium bowl, whisk the eggs and 1 1/2 cups granulated sugar together until combined. Whisk in the oil, greek yogurt, milk, and vanilla extract. Pour the wet ingredients into the dry ingredients, then mix until combined. Be careful not to overmix.
3. Mix the 1/2 cup granulated sugar and 1 Tablespoon of ground cinnamon together.
4. Pour half of the batter into the prepared mini loaf pans. It should be a little over 1/2 cup per mini loaf pan. Sprinkle a thick layer of the cinnamon-sugar mixture evenly over top of each mini loaf pan. Reserve a small amount of the cinnamon-sugar mixture to put on top of each loaf. Pour and spread the other half of the batter on top of the cinnamon-sugar mixture. Use the back of a spoon to spread it evenly. Sprinkle the remaining cinnamon-sugar mixture on top. Carefully, using a knife, make a large swirl down the loaf pans to create that nice swirl.
5. Bake mini loaves for approximately 40 minutes. This time will vary depending on the size of the mini loaf pans. The loaves are done when a toothpick placed in the center of the loaf comes out clean.
6. Cool completely in the pans.

How to Gift Cinnamon Swirl Bread
To gift this cinnamon swirl quick bread you simply wrap them in a sheet of parchment paper and tie it with a pretty ribbon. I love this green and blue ribbon from Walmart. You can add a gift tag too. This bread would be great paired with a tea towel or a bread board.
