Watermelon Margarita “Pop-tail”

When I think about summer my mind immediately goes to ice-cold watermelon, popsicles, and waterslides. There was a time when we would have cocktail Fridays with our neighbors in the summer. I live for a themed day. My next-door neighbor and I would switch off making a fun cocktail and we’d have the other over or we’d just sit in the front of our houses watching the kids play or ride bikes around the cul-de-sac. Those were the days. We’ve since moved away from those neighbors and we hadn’t yet started up the tradition here. Last year, however, I did start popsicle Fridays with the girls. It was towards the beginning of the school year and we really needed something to look forward to and those popsicle Fridays really did the trick. As our school year winds down I’m really ready for a cocktail Friday comeback. When Whole Fruit invited me to share a fun pop-tail with you, I knew exactly the drink I wanted to make.

Can we just talk for a quick second about how adorable the idea of a “poptail” is? A plain ol’ cocktail made great by adding a flavorful fruit bar. I’m all in for it.

There’s a restaurant in Las Vegas that serves fresh watermelon juice and it’s the most refreshing beverage during those oppressively hot summer days. A watermelon margarita with a popsicle floater is a fun twist on that favorite drink of mine from home.

Watermelon Margarita Poptail

Watermelon Margarita – serves 2
1.5c fresh watermelon juice (to make watermelon juice blend about 2 cups of seedless watermelon then strain)
2 oz good tequila (I like Casamigos Blanco Silver)
2 oz lime juice
2 oz triple sec
2 watermelon Whole Fruit fruit bars
Ice
Salt for the glass (optional)

To prepare the margarita mix together the watermelon juice, tequila, lime juice, and triple sec and stir. Prepare two glasses with a rim of salt and ice. Pour margarita over ice. Add the watermelon Whole Fruit fruit bar.

This is such a refreshing cocktail that is completely elevated with the fruit bar. Talk about a cocktail Friday comeback. Who’s coming over this Friday for margs?

Refreshingly delicious margarita with watermelon juice and a popsicle floater

Servings 2 drinks

Ingredients
  

  • 1.5 cup watermelon juice seedless watermelon blended and strained
  • 2 oz tequila
  • 2 oz lime juice
  • 2 oz triple sec
  • 1/2 c ice
