Quick and Easy Dinners – Sheet Pan Meals We Love

I can’t remember now when I started making sheet pan meals. I probably always made them but not so many different and delicious variations. In the past year or so, it seems like almost all of our weeknight meals are some version of a sheet pan meal. I love sheet pan meals because dinner time is insane around here. The silly hour is a real thing. I usually have Millie at my feet while Matt plays with P and tries his hardest to coax Millie into playing too. I need quick and easy dinners that are healthy and delicious that the adults and kids will eat. We’ve tried dozens of sheet pan meals now and I’m sharing some that we love because I think you’ll love them too.

Quick and Easy Italian Sausage and Veggie Bake

This is probably Millie’s favorite meal. We do this quite a bit and switch it up with different sausages (we love the chicken apple sausage the best) and different veggies depending on what’s in season or what we get in our produce box. It’s so easy to chop everything up and toss in on the sheet pan. It’s also great to make ahead. If I know it’s a busy night like we have gymnastics or something, I’ll prep everything ahead of time so that I just have to turn on the oven and throw everything in.

Sheet Pan Honey Mustard Chicken

Chicken thighs are my most favorite cut of the chicken so when I found this recipe I had to try it. We really enjoy this recipe and have tried it with a variety of different veggies. It doesn’t matter which veggies you toss in because the chicken is the star of the show. 

Lemon Parmesan Garlic Chicken

This quick and easy meal is a family fav. Everyone loves the parmesan crust. I use panko breadcrumbs which give a lighter crispier texture and we all love. This is another one that allows you to pretty much add in any veggies your heart desires.

Sheet Pan Honey Garlic Chicken

This is another delicious staple that we’ve added to the rotation. I love the flavor of the glaze. Like a lot of these recipes, I change out the veggies according to what’s in our produce box or whatever is in season

Roasted Lemon Butter Garlic Shrimp and Asparagus

Basically, anything with the combination of lemon, butter, and garlic is alright with me. We love this dish. Here in Jacksonville, we get fresh shrimp on a regular basis. Since peeling and deveining the shrimp can be time-consuming, I’m glad the rest of the prep for this dish is not.

Sheet Pan Balsamic Chicken

I love the sweet and tangy flavors of this chicken. We usually make this dish with potatoes and broccoli because the girls don’t love tomatoes but yum! It’s quick and easy and very delicious. 

Sheet Pan Cashew Chicken

It’s been difficult finding the right sheet pan Asian inspired meals. I love this at home take on a classic dish. The girls won’t eat the cashews but they love the chicken. I always serve this with rice or quinoa.

Chili Lime Shrimp Fajitas

Fajitas are a go-to meal in our house. I love this chili lime recipe because it puts a new spin on a recipe staple. Peighton is not a fan of spice (not even spicy hot just like too much flavor spice – who is this child?) so when we make this we’ll make chili lime shrimp but also a regular chicken fajita dish. Both are amazing leftover also!

Garlic Roasted Salmon with Brussel Sprouts

My kids are hit and miss on brussel sprouts. Some days they love em’ and some days they don’t touch them. We all love them in this dish. Salmon is about the only fish Peighton will eat so when we do fish, it’s salmon. I love that this comes out perfect every single time.
